A Summertime Strawberry Pie Recipe

Strawberries are great for almost anything: jams, juice, ice cream - or eaten just as they are. Strawberries make good pies too. The following recipe will show you how to make a tasty treat called strawberry pie. The ingredients are readily available, and as long as you've got a good batch of firm strawberries, you're ready to go. Here are the ingredients.
For the strawberry pie crust:
* A cup of flour
* 1/4 teaspoon of salt
* 1/2 cup of chilled butter
* 3 or 4 tablespoons of cold water
Preparation:
1. Prepare the pan you'll be using for the strawberry pie crust by putting spreading some butter or grease on it. Cut a piece of parchment paper fitting the pan and grease or butter it too.
2. Pour out the cup of flour into a bowl, follow with the salt and mix. Now, cut the cold butter into pieces and scatter it onto the flour mixture. Beat this thoroughly with a fork, and while doing so, add a spoonful of water once in a while to moisten the flour. When the mixture appears to get gooey, try pinching it and see if it can be molded.
3. Roll the ball into a ball and work it well. This will make the pie crust tougher. After this, put it in the refrigerator for about half an hour.
4. At this point, preheat your oven to 350 degrees Fahrenheit.
5. While waiting for the oven to warm up, take the dough from the fridge and roll it out on a floured plane. Flatten it out with a rolling pin depending on the size of the pan. Fit the dough onto the pan. Punch some holes in the base of the crust with a fork to prevent moisture trapped in the dough from making it bubble. Bake the crust for 10 minutes or until it turns light brown.
For the strawberry pie filling:
* 1 pound of strawberries
* 1 cup of sugar
* 1/4 cup of water
* 1 tablespoon of butter
* 3 tablespoons of cornstarch or corn flour
* Whipped cream
Preparation:
1. Wash and slice the strawberries and macerate them for a few hours in a bowl with 1 cup of sugar.
2. Over a saucepan, drain the strawberries of the juice. Put the strawberries in a bowl.
3. Boil the strawberry juice over medium heat. Add the butter, water and cornstarch and mix. Then after, turn the heat down to medium-low. Cover the saucepan and allow to cook for 2-3 more minutes. Take the juice off the heat and allow to cool for awhile.
4. Mix the strawberries with the juice. Pour the mixture into the pie crust and cover it with whipped cream. Put the strawberry pie in the refrigerator.
Enjoy strawberry pie served cold. You can also add some gelatin to thicken the strawberry filling and add some fresh strawberries on top of the whipped cream.
