Peach and Strawberry Ice Blend
My personal favorite is strawberry ice blend. I especially like to put diced jelly at the bottom of the glass before pouring in the ice blend. It makes a wonderful and delicious beverage or dessert. Especially on a hot or warm day. Best of all I maintain my weight without losing my indulgence.
Ingredients:
2 fresh peaches, diced (substitute with 2 cans of peaches equivalent to 850g, drained)
250g strawberries, hulled
1 small banana, peeled
2 oz. apple juice
200g tub reduced-fat vanilla yoghurt
Optional: Almond bread (to serve) or diced jelly
Method:
Place peaches onto a lined baking tray. Cover and freeze for 3 hours or until they are frozen. Blend frozen peaches, half the strawberries, banana, juice and yoghurt until well combined. You may use a food processor or a blender. Pour the mix into glasses. Slice or dice the remaining strawberries and place them on top. Serve with almond bread if desired.
The almond bread includes nutrition. Remember that the banana should not be over ripe so as to keep this beverage or dessert at a low glycemic index level.
Optional:
Frozen peaches give this beverage or dessert a velvety texture. You may alternatively, add 1 cup of ice to the blender instead of freezing the peaches. By doing so, this will increase the quantity by 1 cup. You may also substitute the peaches for mangoes. Whichever you like more. As I said earlier, you can also add diced jelly for some extra texture. Just place the jelly in the glass before pouring in the ice blend. Enjoy!
